I will be needing new tires for this years track days. I still have the stock rims, what is the best size to go with? 110/70-17 front and 160/60-17 rear?

I'm not sure about the front tire, but that's the right size for the rear with a stock rim.

For a stock rim 110 is your better option. Some have put 120s on stock rims, but most dont recomment it. I had a 120 on my stock rim previously for my stret bike and didnt like the feel of it. I asked the question and heard from many of the experienced riders about tire size preferences. If you are running a stock front definitely a 110. Or you could get an F2 front rim and it bolts right on usuing a wheel spacer. You can run a 120 tire and have a ton more options on tires. Thats what I ended up doing. Im running an F2 front with the stock rim and tires are 120/70/17 and 160/60/17. I hear that the hawk handles great on that setup.

This year I ran the Stocker on the 110-150 combination. I absolutely loved how it handled asside from the suspension. I was sporting Avons that impressed me considering the age and condition of them. I still tell everyone that that Hawk on the 110-150 combination will out flick any new sport bike out there.

Personaly I would just find some sport rubber out there on these sizes and have a blest. Bridgestone seems to be helping thae cause.http://www.motorcycle-karttires.com/RoadRacing.aspx
